En inglésThe following research was carried out in order to understand food and nutritional education in Ecuador from the social representations of Basic General Education (BGE) teachers from a public school. To do so, their social representations were put into dialogue with child malnutrition, teacher training, curricular content, teaching decisions and guidelines on food and EAN at national and international level. The case study was carried out between 2023 and 2024 where the social representations of 12 basic general education teachers (elementary and secondary sublevel) who teach children from 6 to 11 years old in a public school in Ecuador were analyzed. To investigate their social representations, surveys, mixed interviews and the photovoice technique were used. Social representations were used as methodological support, considering them a form of socially elaborated knowledge with shared purposes and the interpretation of a common situation of a social group in an educational institution. In the analysis, concepts from human behavior theories were considered for the categorization and interpretation of the results, such as the transtheoretical model of change and the social cognitive theory. At the same time, the director of the institution was interviewed and a documentary survey of the BGE curriculum, texts and notebooks was carried out; as well as the regulations and guidelines in national and international documents on the EAN. After transcription, the data were treated by the content analysis method proposed by Krause (1998), Cáceres, (2003) y Weiz (2017): pre-analysis, exploration of materials and processing of results, inference and interpretation. This gave rise to seven categories of study that allowed us to understand the social representations of teachers in relation to their knowledge and expertise, their conceptions and experiences, the educational institution and teaching processes, the EGB curriculum, their attitudes, and family and government support to be contrasted with theories and models. The results of the research suggest that teachers' representations of EAN are influenced by the learning opportunities they had in their lives, mainly by experiences at home and later by concepts obtained in the health sector or in the media. Several teachers found themselves repeating knowledge from their homes, although on the other hand, some, due to a lack of knowledge on the subject, preferred to deal with it superficially in class. The findings also showed that teachers valued the importance of EAN, but did not feel confident in their knowledge and teaching skills due to a lack of resources, time, guidance, support and official training processes. On the other hand, it was evident that the institutional norms for healthy consumption in children were behaviorist and, by not allowing critical thinking, distanced them from analysis processes when consuming foods where the factor of taste or ease of consumption prevailed. EAN is addressed in national and international discourses but does not direct its recommendations to the official curriculum and EGB texts where the content on food, although existing, is limited, repetitive and discontinuous. In conclusion, the importance of including standardized processes on EAN at school level that work in accordance with national and international regulations, the curriculum, teaching capabilities, advertising and the family to improve food literacy opportunities and thus contribute to decisions about food that serve to prevent childhood malnutrition is appreciated.
