This book constitutes a valuable addition to the literature dealing with the history of Argentina’s sugar industry. It is actually the second volume of a collective study first published in 1991. Some of these authors have already made significant contributions to the subject; namely, Daniel Santamaria, volume editor Daniel Campi, and most notably, Donna Guy.
The book covers two major themes: the nature and characteristics of the labor force of the ingenios and the evolution of national policies toward the sugar sector.
