The obtaining of nanoparticles based on chitosan (Q) functionalized with active antioxidant compounds such as gallic acid (AG) constitutes a sustainable alternative for the formulation of Q-nanocomposites. On the other hand, the polyvinyl alcohol (PVA) is a biodegradable and semicrystalline polymer widely used in the development of materials. The aims of the work were: to formulate bilayer systems based on nanocomposite films of chitosan and PVA by means of a thermocompression process, studying their physicochemical, structural, mechanical, and water barrier properties (WVP). The inclusion of a PVA layer improved the WVP of the systems. The mechanical properties of these materials exhibited an increase in stress values and a decrease in their elongation. The changes experienced by the bands associated with the vibration modes of the polymers confirmed the modifications supported through an analysis of principal components (PCA). The modification in the crystallinity of the bilayer system as a result of the changes in the heat of crystallization, obtained by MDSC, corroborated the existence of interactions at level of the interface between both matrices. The micrographies obtained by SEM confirmed the formation of the bilayers allowing identifying individually the nanocomposite layer based on Q and the PVA layer.
