En el presente trabajo se caracterizaron geles de alginato de sodio y pectina de bajo metoxilo empleados normalmente como recubrimientos y/o películas comestibles, durante tratamientos de deshidratación osmótica (DO). Se evaluaron diferentes condiciones operativas con el fin de minimizar el ingreso de solutos desde la solución osmótica (SG) y maximizar la pérdida de agua de las muestras hacia la solución (WL) para cada tipo de recubrimiento. Se utilizaron tres tipos de agentes osmóticos (sacarosa, jarabe de glucosa y maltodextrina) a 40 y 60 ºBrix (ºBx), durante 0,5; 1 y 2h, a 40 ºC. Los hidrogeles de alginato mostraron los mayores valores de WL (65,4–73,8%) durante los tratamientos con maltodextrina a 60 ºBx. Los valores de SG más bajos se obtuvieron para el tratamiento con maltodextrina a 40 ºBx. Sin embargo, la mayor relación WL/SG (4,9) se obtuvo después de 0,5 h utilizando jarabe de glucosa a 60 ºBx. En cuanto a los hidrogeles de pectina mostraron resultados similares a los obtenidos para alginato. Las mayores WL (69,9-74,8%), se obtuvieron para la condición 60ºBx-maltodextrina, mientras que los menores SG (12,7–15,1%) correspondieron al tratamiento 40 ºBx-maltodextrina. De acuerdo a los valores WL/SG obtenidos para pectina, el tratamiento más eficiente correspondió a la condición: maltodextrina, 40 ºBx, 1h.

In the present work, sodium alginate and pectin gels normally used as coatings or edible films were characterized during osmotic dehydration (OD) treatments. Different operating conditions were evaluated in order to minimize the solid uptake (SG) from the osmotic solution to the sample and maximize the loss of water (WL) from the samples to the solution for each type of edible coating. Three osmotic agents (sucrose, glucose syrup and maltodextrin) were used at 40 and 60 ºBrix (ºBx), during 0.5; 1 and 2h, by using a constant temperature of 40 ºC. The alginate coated samples showed the highest WL values (65.4-73.8%) during maltodextrin treatments, at 60 ºBx. The lowest SG values were obtained for maltodextrin treatments too, but at 40 ºBx. The highest WL/SG ratio (4.9) was obtained after 0.5 h using glucose syrup at 60 ºBx. The pectin gels showed similar results for WL and SG compared to those obtained for alginate coating. The highest WL (69.9-74.8%) were obtained for the 60ºBx-maltodextrin condition, while the lower SG (12.7-15.1%) corresponded to the 40ºBx-maltodextrin treatment. According to the WL/SG values obtained for pectin coatings, the most efficient treatment was reached with maltodextrin at 40 ºBx for 1h condition.
